Crispy chicken tacos with cheese... I mean does it get any better than that?! An easy, family-friendly Trader Joe's dinner that pairs perfectly with some cilantro lime rice :)

Ingredients

1 lb ground chicken

½ packet Trader Joe's taco seasoning

1 juice of lime

2 cups shredded Mexican blend cheese (or sub vegan Mexican cheese blend from TJ's for dairy free)

12 almond flour tortillas (or can sub corn tortillas if you'd like)

spray avocado oil

for the For Topping:

Trader Joe's Creamy dill dressing

Mild Pico de Gallo salsa

fresh cilantro

for the Cilantro Lime Rice:

2 pre cooked organic jasmine rice packets (found in the frozen section)

¼ cup fresh cilantro

2 juice of limes (plus more to taste)

2 tbs avocado oil

1 tsp salt

Directions

Step 1

Preheat the oven to 425°F.

Step 2

Brown the ground chicken in a skillet for about 10 minutes, or until the meat has cooked through. Then add the taco seasoning, lime juice and stir.

Step 3

Microwave the tortillas on high for 30 seconds, then lay the tortillas out on a sheet pan and spray one side of the tortillas with avocado oil. Flip the tortillas so the olive oil side is down.

12 almond flour tortillas (or can sub corn tortillas if you'd like)

Step 4

Sprinkle 1 tbs of cheese on half of each tortilla. Top the cheese with 2 large scoops of the ground chicken mixture. Add another tbs of cheese on top of the ground chicken mixture.

2 cups shredded Mexican blend cheese (or sub vegan Mexican cheese blend from TJ's for dairy free)

Step 5

Place the tacos in the oven (open) to bake at 425°F for 5 minutes, then pull the tacos out, fold them over, and put them back in the oven to finish baking for 15 minutes. **Note** I didn't do this step correctly in the corresponding video posted on social media so don't be like me lol

Step 6

While tacos bake, prepare the cilantro lime rice by combining ingredients together in a large bowl.

Step 7

Garnish the tacos with creamy sill sauce, pico de gallo, and fresh cilantro.

Serve with cilantro lime rice and enjoy!
